Regarding the Champagne Jacquesson Cuvée 742 Dégorgement Tardif
Like the other cuvées in the "700" family, this 742 DT from Maison Jacquesson is a rarity.
This fabulous brut nature champagne (0.5 gr/l sugar) is the result of a highly successful blend with a dominance of Chardonnay over Pinot noir, built around the 2014 vintage, with grapes of very fine ripeness. The alcohol/acidity balance is excellent. The champagne was aged for 96 months on lees, under cork, before its Late Disgorgement in April 2023.
This is a champagne for connoisseurs, at once saline, airy and endowed with a salivating vinosity. The wine is frank, balanced on the palate, pleasant, dry and harmonious in its firm structure. On the nose, ripe white and yellow fruits are enhanced by pastry notes. The palate is fresh and vibrant, with citrus fruit and a finish of dried fruit and mineral touches.
This Cuvée 742 DT from Maison Jacquesson is worthy of the greatest, and will accompany pan-fried foie gras, gougères stuffed with lobster, poultry and shellfish.
