Know-How "Terroir” (Soil):
A vineyard of 120 hectares, located overwhelmingly on the soils of Vertus, ensures the champagnes Paul Goerg a constant supply of exceptional and high quality grapes. Virtus is located on the south side of the famous Côte des Blancs where Chardonnay is the king, has a land of 564 acres planted with Chardonnay (85%) and classified as Premier Cru. The orientation and layout of the vineyard of Virtus provides a richness and variety which is rare in the Champagne region. Indeed, the village has several micro-soils that allow specific assemblies for the development of each cuvée Paul Goerg. Together with this chalk of Virtus, the south side orientation gives rich and soft wines when the east side hills bring rigor and minerality. Elegance, finesse and the purity of the Chardonnay grape (limited to 28% of the Champagnevineyards), represent the style of the Champagne Paul Goerg.
Know-How "From vine to wine":
Respectful of tradition and grapes, the PAUL GOERG style is based on purity. Indeed, their entire production technique is based on the care given to the raw material and the Champagne region tradition: pressing is based on the respect for grapes, a malolactic fermentation in order to soften the wines from the Chardonnay grape which are known for their distinctive freshness. The precise and meticulous work of the cellar master, who selects wines to create the different vintages of the range, is a guarantee of the uniqueness of the PAUL GOERG’s style. A long aging period well beyond the requirements of the Appellation, a liquor produced from reserve wines and a low dosage, confer all the identity of the champagne Paul Goerg.
