Champagne Le Sous Bois captivates with its deep character and remarkable complexity, enhanced by aging in oak barrels. Its blend combines 43% Chardonnay Grands Crus from the Côte des Blancs, 28% Pinot Noir Premiers and Grands Crus from the Montagne de Reims, Aÿ, and Mareuil-sur-Aÿ, and 29% Meunier from the Marne Valley. The use of reserve wines dating back as far as 2006 lends this cuvée beautiful depth and a true personality.
Its luminous golden color, dotted with fine bubbles, gives way to a rich and refined nose, marked by citrus, orchard fruits, and notes of pastry, followed by mocha and bergamot. On the palate, notes of milk bread, melted butter, and mild spices unfold with elegance and depth. Its Extra Brut dosage lends freshness, structure, and precision to the overall profile.
A true gastronomic Champagne, Le Sous Bois is the ideal accompaniment to hard cheeses, white meats with morels, or a pan-seared dish of chanterelles. Served at around 10 °C, it gradually reveals the full richness of its aging and its aromatic palette.
Thanks to five years of aging on the lees in the cellar, Le Sous Bois already offers a beautiful expression of maturity, while retaining an interesting aging potential of 8 to 10 years in the bottle.
