Regarding the Champagne Billecart - Salmon Cuvée Louis Salmon 2012
The 2012 Louis Salmon Champagne is a tribute to Elisabeth Salmon's brother, who was heavily involved in champagne design right from the founding of the House. It's a Blanc de Blancs Champagne, 100% Grands Crus, from the best parcels of the Côte des Blancs ( Chouilly, Mesnil-sur-Oger, Cramant and Oiry).
This superb 100% Chardonnay 2012 champagne, 25% of which is vinified in oak barrels, is imbued with minerality and purity.
After resting for 11 years in the cellar, we discover an elegant, floral nose with an aromatic profile of chalky character and great purity. On the palate, the sensation is creamy and refreshingly well-balanced, with a very long finish.
This is a champagne that can be kept for over 10 years. Its finesse makes it an excellent match for abalone from Brittany or sea bass carpaccio.
