Regarding the Champagne Bruno Paillard Dosage Zéro D:Z

The Cuvée Dosage Zéro D:Z of the Bruno Paillard House is a champagne of great purity, with a character both northern and chalky.

It is made from more than 30 vintages of the noblest terroirs of the Champagne region, only from the first press, the "cuvée" exclusively, the purest, for the majority vinified in small oak barrels. The Pinot Meunier is in the spotlight, followed in equal parts by the Chardonnay and the Pinot Noir.

As for all the non-vintage champagnes of the House, the Dosage Zéro D:Z always includes a significant part of reserve wines, kept in a "Solera" spirit since 1985 in order to preserve itself from the whims of time. It represents here 50% of the blend.

The maturation is extended well beyond the legal duration: 3 to 4 years in the bottle on the lees, in order to develop the aromas, followed by 6 months of rest after disgorgement.

To the eye, the bubbles are fine and the nose is generous, offering notes of white fruits, fresh almond, chocolate and raspberry. On the palate, the attack is lively and greedy and we find the richness of the aromas of the nose. The saline finish is very persistent.

Champagne Bruno Paillard

Maison Bruno Paillard is a young, independent Champagne House (established in 1981), born of its founder's desire to create a wine that is very different from others, combining elegance with complexity. These are champagnes with light, unctuous effervescence, remarkable purity, true minerality and silky vinosity.

The vineyard covers around 25 hectares, 12 of which are Grands Crus. Today, this vineyard provides more than half of the House's supplies.

The Bruno Paillard style is based on strong commitments: sustainable and expressive viticulture, high quality standards, with only the first presses, and an ageing period 2 to 4 times longer than the minimum required by the appellation.
