Regarding the Champagne Bruno Paillard Assemblage 2015
Maison Bruno Paillard's 2015 extra-brut blend (4.5g/l) is made exclusively from the purest first press of 8 great terroirs (Premiers Crus and Grands Crus only) of Pinot Noir (60%) and Chardonnay (40%), of which 25% are vinified in small old oak barrels. It then spent 7 years in the cellar, including a minimum 1-year rest period after disgorging.
2015 is a solar vintage, combining power and density with an energetic structure.
To the eye, the bubbles are fine. The nose is very fresh, revealing aromas of black fruit, citrus and fresh spices. On the palate, the attack is precise and energetic. The aromas of the nose are repeated. The palate is greedy.
This sunny champagne will be perfect at the table, with lamb confit or spicy cuisine. Each cuvée highlights the expression of a vintage, and each bottle is adorned with the work of an artist, and for this fine 2015 vintage, it's the artist Gérard Titus-Carmel who has the place of honor.
