Regarding the Champagne Bruno Paillard N.P.U 2009 magnum
The name of this Cuvée de Prestige from Maison Bruno Paillard says it all: N.P.U. stands for "Nec Plus Ultra". Indeed, this cuvée was born with the desire to produce the best champagne possible. The same exacting standards are applied at every stage of its conception, and of course only the very best years are selected. 2009 is characterized by its salinity and depth.
Cuvée N.P.U. 2009 is 100% Grands Crus (Oger, Le Mesnil-sur-Oger, Chouilly, Cramant, Verzenay, Mailly-Champagne and Bouzy), made from equal parts Chardonnay and Pinot Noir. Only the purest, first pressing of the grapes is used. Another special feature: fermentation takes place in small old oak barrels to bring out the wine's complexity. The second fermentation takes place in the bottle, with a long cellar ageing period of 12 years, which is quite exceptional ! The wine is then disgorged, followed by a further two years of rest. The dosage is kept to a minimum (4.5g/l), as with all our wines.
To the eye, the effervescence is fine. The fresh nose reveals aromas of citrus fruit and white flowers, gradually evolving towards sandalwood. On the palate, the attack is serene and elegant. Saline meets juicy fruit and texture unfolds on the palate. The aromas evoked by the nose are returned to, leading to a long, sublime finish...
This Extra-Brut champagne is a mealtime champagne that will be perfect with land-sea pairings, such as langoustine with morel mushrooms. Each magnum is numbered and bears the date of disgorgement on its back label. It is housed in a sumptuous wooden case.
