Regarding the Champagne Billecart - Salmon Cuvée Nicolas Francois 2008
This prestigious Nicolas François Billecart cuvée, created in 1964, is a tribute to the founder of the Billecart-Salmon House.
The blend is composed of 60% Pinot Noir from Premiers and Grands Crus located in the Montagne de Reims and the great valley of Marne, then 40% of Chardonnay from the Côte des Blancs. The blend remains unchanged since its creation.
The vinification process is partly raised in oak barrels affirming the generous and elegant character of this champagne. This long ageing gives the wine its incredible complexity.
The nose reveals a great complexity. The hawthorn is very present and intense notes of orchard fruits are also present, associated with mirabelle plum and cherry. On the palate, it is greedy, with peach in syrup, apple pie, then fresh fig and small wild berries. It is powerful, but controlled by its low dosage (2.9gr/l). The finish is of a rare complexity.
This 2008 vintage is a great vintage, deep, mineral, tense and with an elegant vinosity. Pair it with a beautiful roasted Bresse poultry or a milk-fed veal chop with chanterelles.
