Regarding the Champagne Philipponnat Réserve Perpétuelle
Réserve Perpétuelle champagne, the flagship of Maison PHILIPPONNAT, is made from a majority of Grands Crus and Premiers Crus grapes (66% Pinot Noir, 32% Chardonnay and 2% Meunier). The special feature of this cuvée is the very high proportion of reserve wines aged in wood: 56%, which gives it great aromatic complexity.
The champagne is full-bodied, with good body. It's supple and fresh, and manages to combine delicacy, freshness and vinosity.
Aged for three years in the cellar (much longer than the legal minimum of 15 months), Réserve Perpétuelle offers aromas of toast, vine flower and red fruit on the nose after aeration. On the palate, the attack is vinous, with raspberry flavors in particular, leading to a well-defined cookie finish.
This is a champagne for all occasions, to be served chilled but not iced (8°C). Perfect as an aperitif, but also with white meats, poultry, smoked salmon, langoustine carpaccio and seafood.
