Champagne Billecart-Salmon N°Cinq Pinot Noir Extra Brut is a fifth rendez-vous. The Rendez-vous from Maison Billecart-Salmon were created to honor an exceptional terroir and a Champagne grape variety, combined with the art of winemaking at its most demanding.
This fifth rendezvous highlights Pinot Noir from the villages of Ambonnay, Verzenay, Aÿ, Verzy and Mareuil-sur-Aÿ, based on the 2015 vintage.
This cuvée evolved nobly over 70 months. Selective work based on the notion of purity and balance of flavors, with a very low dosage of 1g/l, reveals a champagne that renews the identity expression of Pinot Noir on exceptional terroirs.
The bubbles are extremely fine. The nose reveals aromas of verbena and crisp fresh fruit. The Pinot Noir gradually reveals itself. On the palate, it's very elegant and full-bodied, with aromas of almond and limoncello that stretch to cherry and stone fruit.
This prestigious cuvée can be kept for 5 years, and is perfect with lobster or crab.
