Regarding the Champagne Billecart - Salmon N°3 Meunier Extra-Brut
The Cuvée Meunier Extra-Brut N°3 from the Maison Billecart-Salmon is a 100% Meunier Extra-Brut champagne, made from the 2015 harvest of the finest terroirs of Leuvrigny, Venteuil and Damery.
33% of reserve wines from the 2013 harvest are added to the blend, in order to enhance the purity of the fruit and the balance of flavors. This champagne has been raised for 64 months on lees and is dosed as an extra-brut with 2g/l.
In the never ending pursuite of excellence, Maison Billecart-Salmon’s tasting committee carries out regular experiments. The 2015 harvest was one of them. Bottled to measure the evolution of some grape varieties, some terroirs, and therefore this 100% Meunier blend, the superb N°3 cuvée has never been drawn before.
The low vinification temperature allows this cuvée to retain all its freshness and preserves the acidity structure of the champagne.
We discover a subtle nose, where we perceive floral and citrus aromas. On the palate, it develops a beautiful roundness and a delicate fruitiness of cherry and pineapple, with a beautiful finish that stretches towards yellow fruits.
Pair this Champagne Meunier Extra Brut N°3 with a 30 month Parmigiano-Reggiano, a pâté en croute or a veal pie with foie gras.
