Like all the other cuvées from champagnes Michel Loriot’s APOLLONIS range, this cuvée Palmyre Brut Nature was aged on slats, to the sound of music. It is elaborated from 67% Meunier and 33% Chardonnay sourced from the vines of the city of Festigny, and certified HEV (High environmental Value).
With zero dosage, this energetic and pure champagne recalls Palmyre, Michel Loriot’s great-grandmother. This Brut Nature is clearly influenced by the presence of Chardonnay, which provides a great elegance.
The nose unveils white fruits fragrances, mainly apple and pear. The palate is well balanced and faithfull to the nose. A fruity and tender cuvée, a tasty, tight and lemony final, for a perfect harmony between fruit and freshness. It's a very rare cuvée : just 2500 bottles !
Palmyre Brut Nature is absolutely delicious with oysters, smoked salmon, spring rolls, a scallop gratin or sushis.

Martine and Michel Loriot : the passion of champagne and music ! With the brand APOLLONIS, Champagne Michel Loriot is recognized as the expert of Meunier since 1931. The vineyard represents 7 hectares and is certified HVE (High environmental Value), and is rocked to the rhythm of Beethoven, Mozart, Mahler and Vivaldi. The virtuoso Michel Loriot uses the « proteody » method, which advocates the benefit of musical vibrations in the vines and on plants in general, as well as in the cellar. Music is played for 10 minutes every morning and evening from April to May. The wines are raised to the sounds of the great classical composers for several months. The music notes would reach the yeasts acting directly on the structure of the wine to deliver all the aromas in a soft and progressive way. Champagnes Michel Loriot are an ode to the Greek muse in charge of art and music, the daughter of Apollo: "Apollonis". The 12th generation of the family offers vibrant champagnes, for every amateur of terroir and musique. These cuvées are recognized in many guides (Hachette, Bettane et Desseauve, RVF, Gault Millau…)
