Regarding the Champagne Philipponnat Le Léon 2014
Cuvée Léon 2014 is the most precise expression of Ay's terroir, and of the historic parcel of land known as "Le Léon". Made exclusively from Grand Crus, this 100% pinot noir is dosed extra brut to maintain the balance between freshness and vinosity and not mask the wine's character and purity.
It has been aged for at least seven years to obtain the wine's greatest complexity and bring out the secondary and tertiary aromas, the hallmarks of prolonged aging on lees.
The bubbles are fine and creamy, and the fruity nose opens with notes of black fruit and evolves to cinnamon. On the palate, the attack is creamy and greedy. The finish is long and mineral.
Serve this Blanc de Noirs champagne chilled (around 8-9°c) as an aperitif, or at around 10-12°c with a meal. It's the perfect accompaniment to seafood or Bellota ham. It can be cellared for up to 10 years!

Champagne Philipponnat
