Cuvée UMAMI is issued from several particular climates carefully selected in the Great Growthsoil (terroir) of the House DE SOUSA.
This cuvée was especially elaborated to celebrate the 10th anniversary of the Zoémie de Sousa range.
UMAMI is an Extra-Brut champagne that leaves a soft and long-lasting sensation: simply inimitable!
Our style of champagne has always been in a velvet texture : this notion of UMAMI discovered by the Japanese also mentions it : length, depth, velvet, minerality and sapidity.
Biodynamics strongly contributes to enhace UMAMI flavours by increasing the life of the soil. As in the land of the plots carefully selected for this cuvée, we can talk of consistency for this champagne generated by the natural elements of grapes issued from old vines.
This rare cuvée is available in limited quantity : only 6690 bottles produced.

CHAMPAGNE DE SOUSA Representing the third generation, Erick De Sousa Manages this 9.5 hectares champagne house since1986. It is located in avize, in the heart of the Côte des Blancs, on the most beautiful soils classified Grand Cru Chardonnay: Avize, Oger, Cramant, Le Mesnil sur Oger but also Pinot Noir located in Ay and Ambonnay. Engaged since many years in a Biologic growing process, the De Sousa house was certified in 2010, ensuring consumers of the quality of the product. One feature of the De Sousa house is to have kept many old vines over 50 years.
