Regarding the Champagne Bruno Paillard Assemblage 2012
The 2012 blend of the Bruno Paillard House, dosed in extra-brut (4.5g/l) is exclusively from the first press, the purest, of 8 great terroirs of Pinot Noir (60%) and Chardonnay (40%), of which 20% are vinified in small old oak barrels. It then spent 8 years in the cellar, including a minimum of 1 year of rest after disgorgement.
2012 was certainly an intense year, and if the yield is quite low, the quality of the grapes at harvest, particularly in pinot noir and chardonnay, is brilliant. This vintage offers us a greedy and concentrated champagne.
To the eye, the bubbles are fine. The nose is very fresh and reveals aromas of cherry and peach, dried fig and honey. In mouth, the attack is precise, energetic. We find the aromas of the nose. The mouth is greedy, and raised by a persistent saline freshness. This complex and mature champagne will divinely accompany a fish such as red mullet or monkfish, but also lamb confit or spicy cuisine.
Each cuvée highlights the expression of a vintage and each bottle is adorned with the work of an artist, and for this beautiful vintage 2012, it is the painter Claude Viallat who is honored.
