Regarding the Champagne Bollinger R.D. 2008
The emblematic R.D. 2008 is the "Recently Disgorged" vintage of the House of Bollinger. It embodies the audacity of the House of Bollinger. The expectation of aging combined with the immediacy of disgorging creates an incredibly harmonious contrast.
This great champagne is composed of 71% Pinot Noir and 29% Chardonnay and has a very low dosage. 2008 vintage is exceptional, out of time.
The dress reveals golden reflections. The nose is full of greediness, and offers aromas of apricot, honey and almond paste. In mouth, the effervescence is rich and precise. One discovers aromas of citrus fruits, mirabelle plum and vine peach. The finish is saline with a nice length in the mouth.
Enjoy the aromatic complexity of your RD 2008 with scallops with hazelnuts, or a gastronomic dish such as a Poularde de Bresse, ginger and saffron sauce.

Champagne Bollinger
Created in 1829, the House of Bollinger, located in Aÿ, covers 165 hectares of vineyards, with 85% of Grands and Premiers Crus. 60% are Pinot Noir, whose power is the hallmark of Bollinger champagnes. This House offers us very great wine champagnes, powerful, complex, refined and with low dosage.
Symbol of the requirement and the perfection, the house is since 1884 one of the official suppliers of the Crown of England. The House of Bollinger has 700,000 magnums in reserve: it is the only House to have such a precise palette of aromas to complete its blends. The best vintages are vinified in wood and all of its champagnes are aged for twice as long as the rules of the appellation require.
