#1 - Cuvée Théodorine from the Apollonis range of Champagnes Michel Loriot
You'll fall head over heels for this Rosé from Champagnes Michel Loriot's Apollonis range. Blended with the 3 traditional grape varieties (42% Meunier, 48% Chardonnay, and 10% Pinot Noir, including 5% red wine), Cuvée Théodorine, named after an ancestor of the House, has aged to the sound of classical music played 24 hours a day in the Domaine's cellars.
Produced in a limited edition of 6,500, this Champagne embodies the subtleties of each of the 3 grape varieties: the fruitiness of the Meunier, the floral notes of the Chardonnay and the intensity of the Pinot Noir vinified as a red wine. On tasting, the nose expresses notes of red fruit (wild strawberry, redcurrant, raspberry and rose). Notes of wild strawberry and candied citrus then explode on the palate. The finish is invigorating and crisp, like a green apple. The very fine effervescence and sustained acidity suggest good ageing potential.

#2 - Blanc de Noirs Brut from Champagne Fleury
This seductive wine from the Côte des Bar will leave you breathless. Nicknamed "BN" by connoisseurs, this grand Blanc de Noirs, lightly dosed, is a Champagne d'artisan made using biodynamic farming methods.
Exclusively blended from Pinots Noirs from several harvests and partially aged in wood, this subtle wine, which has spent 4 years in the cellar, reveals a bouquet of rich, complex aromas of dried fruit, white peach, iris and honey. On the palate, it's deliciously fresh, offering a perfect balance between suppleness and liveliness, with notes of old rose.
L'Accord gourmand by Envie de Champ' #3 - La Cuvée Blanc de Champ': its astonishing expressiveness and the finesse of its effervescence will match divinely well as an aperitif with a delicious board of fine charcuterie or a truffled Brie.
#3 - Cuvée Blanc de blancs by Champagne Thiénot
With this Cuvée, Maison Thiénot delivers a beautiful interpretation of the Chardonnay grape. To create this great wine, the finest Chardonnays from the terroirs of Avize, Villers-Marmery, Vertus and Vitryat were carefully selected for their complementarity and singular expression.
After two years' ageing, and with a low dosage, this Blanc de Blancs reveals an attractive golden hue with very light reflections and hints of emerald. The nose is dominated by notes of citrus, lemon and orange blossom. The palate is chiselled and refreshing, with a magnificent effervescence.
L'Accord gourmand by Envie de Champ' : The fruity gourmandise of this Champagne goes well with a delicious salmon steak grilled in lemon oil.
With this selection of summer flavors, there's no excuse to prolong summer at home to the sound of a "summer vibes" playlist ;).
Cheers!
