Concernant le Champagne Billecart - Salmon Brut Cuvée Nicolas Francois Billecart 2007
Cuvée de Prestige Nicolas François Billecart was created in 1964 and is a tribute to the founder of Maison Billecart-Salmon.
The blend is composed of 60% Pinot Noir from Premiers and Grands Crus located in the Montagne de Reims and the great valley of Marne, then 40% of Chardonnay from the Côte des Blancs. The blend remains unchanged since its creation. The vinification process is partly raised in traditional barrels. The wine has been disgorged in July 2019.
This 11 years long aging period confer to the wine an unbelievable complexity. This cuvée is of an exceptional elegance ! The nose develops a great complexity. Hawthorn, intense orchard fruits together with stone fruits such as cherry plum and cherry characterizes this cuvée. The palate is gourmand and offers aromas of peach, apple tart and butter, followed by fresh fig and small wild berries.
