Regarding the Champagne Philipponnat Clos des Goisses 2014 casket
Philiponnat's 2014 Clos des Goisses cuvée comes from a hillside, divided into 14 parcels of pure chalk, in Mareuil-sur-Ay, whose 45° slope gives the cuvée its name. In old Champagne, "Gois" or "Goisse" refers to an extremely steep hillside. Only the best parcels of the vintage were included in this blend of 71% Pinot Noir and 29% Chardonnay.
Its partial vinification (64%) in oak barrels offers greater complexity, and there is no malolactic fermentation. It is then aged for 8 years in the House cellars, and a low dosage (4.25g/l) was chosen to allow all the minerality and vinosity of this great vineyard to express itself.
Its foam is beautifully effervescent. The nose is fresh and expressive with notes of yellow fruit, gradually revealing more floral notes. The palate is intense and fruity, with notes of fresh fruit. The finish is mineral and saline.
This prestige extra-brut cuvée is perfect with seafood dishes such as lobster, iodized fish and soft cheeses. Don't hesitate to decant before serving.
PHILIPPONNAT's Clos des Goisses 2014 comes in a gift box. It has reached perfect maturity, but can be cellared for several decades.
