Regarding the Champagne Billecart - Salmon Cuvée Louis Salmon 2007
The new cuvée Louis Salmon 2007 is a tribute to Elisabeth Salmon’s brother, who was very involved in the creation of champagnes since the very beginning. It's a Blanc de Blancs champagne, sourced from the best plots of the Côte des Blancs (three Grands Crus : Chouilly, Mesnil-sur-Oger and Cramant).
This superb 2007 100% Chardonnay champagne has been vinified in oak cask for 50%. It is full of minerality and purity.
Following 10 years of cellar aging, the nose unveils an aromatic profile with a chalky character of a great purity. The palate develops a great refreshing balance and the final is of a marvelous length.
This champagne can be kept for 10 years. Its extremely fine structure is perfect with dishes such as sweetbread, or a creamy seafood risotto.
