Regarding the Champagne Castelnau ES 9.1 Solera
Cuvée Origine ES 9.1 from the Maison CASTELNAU is the second cuvée from the perpetual reserve and bottled in 2018.
- ES is for Elisabeth Sarcelet, the cellar master of the House, who initiated this project.
- 9 for the 2009 cuvée that makes up this wine.
- 1 because it is the first vintage after the zero point of Soleras.
This champagne is composed of 45% Chardonnay, 35% Pinot Meunier and 15% Pinot Noir. The harvest of 2009 will be the base of this champagne. It is composed of the Solera 9.0 cuvée rejuvenated during the first draw in 2017 of a small percentage of Meunier from 2015.
The cuvée Origine ES 9.0 is therefore the Original cuvée of this great project. The basis of a work of goldsmithery pushing the art of blending to its paroxysm. Solera 9.0 benefits from an aging of 4 years, but from a very long maturation in vats of 100% of the wines that compose it.
On the nose, the Cuvée Origine ES 9.1. of CASTELNAU reveals notes of toast, candied fruits and sweet spices. The mouth is both fleshy, frank and smooth. We find the complex aromas of the nose, with an enveloping finish supported by the freshness of exotic fruits.
This vintage with a good ageing potential will sublimate the dishes of the high Japanese gastronomy.
