Regarding the Champagne Devaux Sténopé 2012
Sténopé vintage 2012 is the result of the meeting between the Champagne and the Vallée du Rhône, between Maison Devaux and Michel Chapoutier. An encounter that gave birth to a rare champagne which faithfully mirrors a single year : 2012.
« Sténos » means « tight/narrow » and echoes the little hole on the wall of a photography black room. This photographic device allows to capture an picture of reality. This is exactly what "Sténopé" is: the best portrait of a season. Always vintaged, Sténopé is a cuvée elaborated from a blend composed from equal proportions of Chardonnay and Pinot Noir, and raised in oak casks.
The nose is greedy, with aromas of brioche and vanilla. In the mouth, it is fresh and slender, fleshy and tasty, typical of this vintage. The aromas of bergamot, lemon support a beautiful tone, with a long finish.
Sténopé 2012 is at the same time generous, fresh and of a beautiful maturity. A champagne for connoisseurs!
You can enjoy this delicate cuvée with oysters or sweetbreads. It is also delicious with scallops accompanied by caviar and watercress emulsion.
