Bubble are fine, the nose is mineral, chalky, so characteristic of Salon, with fruity notes and dried roses notes. The length in the mouth never ends There is a freshness, with this frank and noble acidity, based on impeccable structure. Salon 2012, once aired, unleashes its seductive notes of pineapple, lychee, and a touch of smoke in the mouth. A real shock, a never ending dazzlement !
Salon 2012 : a youthful dazzling champagne, which will mature and age beautifully!
Best served slightly fresh, between 13°c and 15°c. The extreme purity goes well with its frank minerality, it can be associated with a tartare of langoustines, scallops, a roasted turbot with miso, or a fillet of milk-fed veal from Corrèze with white asparagus and morels.
