The Cuvée Oenophile Non Dosé 2016 of the House PIERRE GIMONNET & FILS is a 100% Chardonnay. A complex champagne, perfectly matured.
After spending a long time aging on the lees, we discover a great Nature champagne of superb finesse. It benefits from a very "Grands Crus" blend (70%), essentially from the terroir of Cramant.
The 2016 Oenophile is the same blend as the 2016 Fleuron, with no dosage (i.e. no expedition liqueur). This natural champagne is an extract of Grands Chardonnay, intended for lovers of very racy champagnes, for lovers of mineral Blanc de Blancs.
This champagne is a perfection in style. The chalky mineral finish of this vintage makes it ideal to be enjoyed on its own, for intense pleasure or with seafood.

Champagne Pierre Gimonnet
In the world of champagnes, there is a true "Pierre Gimonnet" signature. It is refined, elegant, wise, never exuberant. This style is the creation of Michel Gimonnet in 1935, the father of Olivier and Didier Gimonnet who are now in charge of the 28 hectares of Chardonnay, classified Grand Cru and Premier Cru.
Over the years, they have succeeded in sublimating the House's wines. The brothers, in love with their terroir, perpetuate a timeless wine style, based on freshness and aromatic finesse. Unique and prized "Grands Blancs".
