Regarding the Champagne Philipponnat La Rémissonne 2009
Cuvée La Rémissonne from Philipponnat is one of three cuvées crafted using grapes harvested in the great 2009 exclusively from selected plots. There is just 2590 bottles. The cuvée is the most intense expression of the central plots in Clos des Goisses.
This cuvée is elaborated from 100% Pinot Noir 1rst Crus from the heart of Champagne.
It is vinified with no malolactic fermentation, 100% in casks, with an "Extra-brut" dosage (4.5 g/litre) to maintain a balance between freshness and vinosity without masking the wine’s character and purity.
It reveals fine and creamy bubbles, with a persistant cord. The nose reveals notes of raspberry and almond blossom. The palate is generous and full. It offers us aromas of violets, raspberries with a long and rich finish.
It will be perfect with a foie gras or with a game pâté. It has to be served chilled, around 8 to 9°c as an aperitif and between 10 and 12°c at mealtime.
The cuvée has been cellar-aged for seven to nine years giving complexity, and if it is kept in a cool and dark cellar it will continue to develop magnificently for ten years.
