The all new cuvée from Maison DRAPPIER is called Clarevallis, a tribute to the abbey of Clairvaux, which is owned by the DRAPPIER family. It is sourced from organic plots, and partly plowed by horse.
This cuvée is elaborated from 75% of Pinot Noir, 10% of Pinot Meunier and 5% of Blanc Vrai. Only the first juices are selected, and there is very few sulfur (20mg/l).
Clarevallis represents the expression of the landscape and terroir which are mastered by men since the 12th century.
At first, the color is golden-grey to the eye. The nose unveils elderberry and violet notes, with a lot of minerality. The palate is well-balanced with a discreet dosage and pretty bitters flavors.
The all new cuvée Clarevallis from Maison DRAPPIER is delicious for the aperitif and a delectable match for fishes or even with norway lobsters.

CHAMPAGNE DRAPPIER The history of the walls today inhabited by the DRAPPIER Family goes back to the 12th century when Saint Bernard had an annex to Clairvaux Abbey built in Urville. The vineyard which today surrounds these Cistercian cellars is the pride of our House.
