Cuvée Meunier Extra-Brut N ° 1 from Maison Billecart-Salmon is a 100% Meunier Extra-brut champagne, elaborated from the 2014 harvest and from the most beautiful terroirs of Meunier, Leuvrigny and Festigny on the Left Bank, from east and south oriented plots, on limestone soils, but also from Venteuil on the Right Bank.
33% of reserve wines from the 2012 harvest are added to the blend, in order to enhance the purity of the fruit and the balance of flavors. This champagne has been raised for 52 months on lees and is dosed as an extra-brut with 4.5g/l.
In the never ending pursuite of excellence, Maison Billecart-Salmon’s tasting committee carries out regular experiments. The 2014 harvest was one of them. Bottled to measure the evolution of some grape varieties, some terroirs, and therefore this 100% Meunier blend, the superb N ° 1 cuvée has never been drawn before.
The low vinification temperature (13 ° C) allows this cuvée to retain all its freshness and preserves the acidity structure of the champagne.
One’s discover a complex, elegant and refined nose, where we perceive scents of small yellow fruits, a tangy, lemony side, which evolves on violet flower. The palate develops a nice roundness and a delicate fruitiness of pear and currant, and avoids the final astringent aspect.
Champagne Meunier Extra Brut N°1 is delicious with a 30 month-old Parmigiano-Reggiano, or a pan-fried chanterelle mushroom, and even with Asian cuisine!
