Ayala is thus the pioneer in a totally new style in Champagne. It is the natural beauty and intrinsic quality of their wines that gave them the idea to produce “Nature” champagnes in order to highlight their amazing freshness, purity and harmony."
Nicolas Klym has been the Cellar Master of Champagne Ayala for over 25 years. Nicolas pays particular attention to the quality of the grapes in order to produce great cuvees with the distinctive Ayala style: Purity - Freshness – Fineness – Precision - Elegance At Ayala, the main idea is to produce wines which can be appreciated "Nature”, or without any added sugar. Producing a Brut Nature requires the very best grapes, very careful and precise blending as well as long ageing in the cellars. Alaya’s Brut Nature is the living proof that their Brut Majeur (which only has a low dosage) is an amazing wine since it is already perfect without any dosage. After disgorgement, Alayas’s wines stay for at least 3 more months before they are released. In order to help you manage your own cellar and to allow you to adapt the extra-ageing to your personal taste, the date of disgorgement is printed on the back of label.
