Regarding the Champagne Castelnau ES 9.0 Solera
The Origine ES 9.0 cuvée from Maison CASTELNAU marks the birth of a cuvée in the world of perpetual reserve. This champagne comes from the 2009 harvest, the O point of future Soleras. -

This champagne is made from 50% Chardonnay, 35% Pinot Meunier and 15% Pinot Noir. The 2009 harvest will therefore be the base of this cuvée. In 2017, part of the 2009 blend is bottled to undergo the prize de mousse, the other part will continue its adventure in vats accompanied by Chardonnays from the 2017 harvest. A meeting between wisdom and passion, the innovation and memory.
The Origine ES 9.0 cuvée is therefore the Originelle cuvée of this great project. The basis of a work of goldsmith pushing the art of assembly to its paroxysm. Its aromatic universe is full of nobility. The opening on toast and undergrowth transports us to an autumnal nature where the power of the scents personalizes the cuvée. Aromas of nougat, honey and dried apricot are revealed with finesse and precision. Its dynamism on the lemony freshness softens its character full of maturity.
This cuvée with great aging potential will sublimate the dishes of Japanese haute cuisine.
