The depth of the Pinots Noirs (70% of the composition) and the purity of the Chardonnays (30%) reveal the surprising potential of this 2003 vintage and a great maturity.
There is a great aromatic balance with a range of toasted notes ranging from praline to toast. The breadth in the mouth is characterized by the marriage between candied citrus and the typical animal notes of Pinot Noir.
These flavors reveal a fantastic champagne, chiselled, of an imposing material but always in subtlety.
The Brut 2003 champagne from Maison CASTELNAU will be ideal as an aperitif or as an accompaniment to a veal mignon with chanterelles.
