Regarding the Champagne Bruno Paillard Cuvée 72
The Cuvée 72 takes its name from the addition of 36+36 for 72 months of maturation of the Première Cuvée. It is therefore a variation of this champagne which will develop more complexity with these three years of additional maturation after its disgorgement.
Composed of more than 30 crus, Cuvée 72 is the composition of a solera of reserve wines with a new harvest, from the first pressings of the three Champagne grape varieties: Chardonnay, Pinot Noir and Meunier.
Like all the cuvées of the House, this champagne is dosed in extra-brut (less than 6gr/l).
The bubbles are very fine, the nose reveals aromas of citrus fruits, white flowers, then, after aeration aromas of spices. In mouth, the attack is enveloping and lively. We find the aromas of the nose, accompanied by notes of black fruits and dried fruits. The finish is very pure and long.
These 72 months of patience give birth to a champagne faithful to its original straightness, whose fruit aromas have evolved towards more spicy and floral aromas. A small wonder...
