Regarding the Champagne Bruno Paillard Blanc de Blancs 2013
The 2013 Blanc de Blancs champagne from the Bruno Paillard House is made only from first press, the purest of the Grand Crus of Chardonnay from the Côte des Blancs (Oger and Le Mesnil-Sur-Oger), 25% of which are vinified in oak barrels.
Chardonnays are the big winners of the 2013 harvest. Indeed, this vintage offers us champagnes of great freshness and generosity.
Like all the cuvées of the House, it is dosed in Extra-Brut (4.5g/l). After 7 years of ageing and 12 to 18 months of rest after disgorging, we discover a champagne with fine bubbles. The nose is fresh, biting, with notes of white flowers, white peach and almond. In the mouth, the attack is lively and crystalline, the texture is ample and melted with a beautiful freshness.
The tasting will be ideal at a temperature of 8 to 9°, as an aperitif, or during a meal with fish.
