Regarding the Champagne Bruno Paillard N.P.U 2008
Everything is said in the name of this Cuvée de Prestige of Bruno Paillard House: N.P.U. for "Nec Plus Ultra" (the best). Indeed, this cuvée was born from the desire to produce the best champagne possible. This requirement is present at all stages of its conception and of course, only the very best years are selected.
The N.P.U. 2008 is the eighth vintage and 2008 is one of those great vintages.
The N.P.U. 2008 champagne is 100% Grands Crus (Oger, Le Mesnil-sur-Oger, Chouilly, Cramant, Verzenay, Mailly-Champagne and Bouzy), made from equal parts of Chardonnay and Pinot Noir. Only the first press of the grapes is retained, the purest. Another particularity: the fermentation is done in small old oak barrels to bring more complexity. The second fermentation takes place in the bottle, with a long aging in the cellar for 12 years, which is quite exceptional! Disgorgement is in April 2019, followed by two more years of rest. The dosage is reduced to the strict minimum (3g/l), like all the wines of the House.
To the eye, the effervescence is fine. The nose reveals notes of red fruits, ginger and even cocoa. In the mouth, the attack is fresh and powerful. The vivacity of the vintage is wonderfully melted, allowing to explore further the depth of the wine. We find the aromas evoked by the nose, taken in a long finish.
This Extra-Brut champagne is a meal champagne for lovers of great vintages. It will go divinely with grilled scampi, veal tartar, saffron risotto with clams, or quail with foie gras. Each bottle is numbered and bears the date of disgorgement on its back label.
