Regarding the Champagne Billecart - Salmon Cuvée Louis Salmon 2008
The Louis Salmon 2008 champagne is a tribute to Elisabeth Salmon's brother, who was very involved in the conception of the champagnes since the creation of the House. It is a Blanc de Blancs champagne, 100% Grands Crus, from the best plots of the Côte des Blancs (Chouilly, Mesnil-sur-Oger, Cramant and Avize).
This superb champagne 100% Chardonnay 2008 of which 33% are vinified in oak barrels is full of minerality and purity.
After having rested for 11 years in the cellar, we discover on the nose, an aromatic profile with a chalky character of great purity. On the palate, we have a beautiful refreshing balance with a very long finish.
This champagne can be kept for 10 years. Its extremely fine structure is perfect with dishes such as sweetbread, or a creamy seafood risotto.
