Regarding the Champagne Billecart - Salmon Brut Rosé Cuvée Elisabeth Salmon 2008
Cuvée Brut Rosé Elisabeth Salmon 2008 from Maison Billecart-Salmon is a true jewel which was raised for 9 years !
It is elaborated from 50% Pinot Noir of the Montagne de Reims and Marne’s great valley, and 50% Chardonnay from the Côte des Blancs. The main majority of the grapes is sourced from Grand Cru. Some of the Pinots Noirs were vinified in red wine. This red wine represents 9% of the cuvée.
For the very first time, Maison Billecart-Salmon incorporated in the cuvée 17% of wines vinified in barrels offering then a slight hint of vanilla. The nose unveils red fruit (cherry) and exploding pomelos aromas, together with a touch of melted butter, pastry and spices, giving an incredible depth.
A champagne of a creazy youth which bursts in the mouth with creamy and juicy fruity notes. A lemony and savory finish of an exceptional persistence. A gourmet, ample and deep champagne !
And when it comes to magnify it, Maison Billecart-Salmon called on the starred chef Anne-Sophie Pic. She created unique pairings such as steamed scallops in a coconut, accompanied with truffle. You can also enjoy it with caviar, sashimis, a poulty with morels or spicy lamb chop.
