Regarding the Champagne Ayala Perle d'Ayala 2013
A prestige cuvée has to be a masterpiece. The Cuvée Perle d'AYALA deserves its name and the House is a jewel in Champagne. Grapes are sourced from Grands Crus only, and from a great vintage : 2013.
What makes the Perle so unique is that it is aged in the cellars with a natural cork closure (more than 8 years), which enables the wine to have an exchange with the air and to develop beautiful and complex aromas.
The disgorgement is done by hand, as it was done in the past. This champagne is of rare elegance and great purity, combining finesse and aromatic complexity. Bubbles are fine, the nose is expressive and complex. In the mouth, we discover a beautiful minerality, with minty notes, and a long finish.
Made from 80% of Chardonnay and 20% of Pinot Noir, Perle d'Ayala 2013 is a great match with
a beek tataki, duck breast, a 7-hour leg of lamb or for dessert with a plum tart.
For the most demanding connoisseurs.... It's sold in its very elegant and free wooden box.

Located in Aÿ for over 150 years, Maison Ayala is one of the oldest Champagne Houses. It owns a vineyard in the heart of the Grands Crus. This family-run business was bought by the BOLLINGER family in 2005.
Maison AYALA is committed to working in harmony with nature, and is certified VDC (Viticulture Durable en Champagne) on its vineyard and is in organic conversion.
